I saw some people with some sad wraps for lunch in the first week back, here is a simple recipe to add some flavor. Great for the vegetarians and if you don't like eggplants, replace it with tofu or chicken and maybe add avocado.

Intro to Mindfulness 6 Week Course

This is a series of six talks that an experienced Zen monk gave a few years ago, each one aimed towards beginners interested in learning the mechanics and theory behind meditation. There are six talks total, designed to be listened to one per week, and each is paired with a series of exercises and homework assignments for those who want to start a daily practice. I really like Gil’s style because he breaks down the vague language that surrounds meditation into clear, concrete steps. He makes everything approachable.

These are unrelated talks given by three research giants in mindfulness at Google’s headquarters. They lend a lot of scientific weight to the practice, and would probably connect with people who want to some hard, clinical evidence. Each talk is long, but incredibly interesting; Jon Kabbat-Zin highlights the feel and importance of the practice like a poet … incredible. Mattiew Ricard is molecular geneticist and Tibetan monk who details research on the most accomplished practitioners, which is pretty mindblowing. Richie Davidson is a psychologist who studies the neuroscience of compassion-practice in lay people. Each researcher is a PhD in a different field and have robust daily practices themselves.
I’ve never used it, but I’ve heard this is a great app for people who wanted to get started with a little extra help; tons of guided meditations and the ability to set daily reminders if need be.

Delayed second recipe, but here is something quick and simple I usually make in large batches (or a variation depending on what is in my fridge). I can make 2 - 3 meals from each packet of couscous. I prefer guesstimating over measuring, however for those of you that would like numbers I got some measurements from another recipe online.
You could put in olive oil to you heart's desire, I usually never do.
For the people that find cilantro repulsive, try parsley or basil and add some mint!

LESS THAN 1 HOUR!
Not only green and satisfying, this meal also takes minimal effort to prepare. It's full of healthy, clean ingredients like quinoa and avocado. Although it calls for mushrooms and pine nuts, you could add any additional veggies or nuts you like.

I know there has been some confusion with the Escort connected to the undergrad campus, so to clarify there is a separate service available for us that's connected to the hospital.
